Well, well, my dear and faithful blog readers, I have been away for a very long time. Life (and facebook!) got in the way and I haven’t had the gumption to post at all. Never fear, I am still eating and cooking, but I am lazy in the blogging. Please accept my apologies.
I love a good theme. I find themes to be motivating. I also love sandwiches. What better thing to do than put both of the ideas together, right? For the entire month of April, I will be eating sandwiches every day and featuring them on this blog. I can’t guarantee they will always be homemade or appetizing, as I have been known to make some pretty odd concoctions between two slices of bread, but I will updating daily.
I also will be taking your suggestion for sandwich ideas, but please keep your suggestions vegetarian or easily converted with use of meat analogs. Also, no eggs. That is one thing I am firm on. Eggs=yucky.
With that said, look for the first sandwich update later tonight. I think we just might start with a classic 🙂

Kari just pointed me to your blog and I love your sandwich a day idea. I too am a sandwich devotee…and not a fan of eggs (def. yucky).
I’m having a sandwich right now…maybe not exciting enough to affirmatively suggest, but it’s bbq tofu with carmelized onion on wheat bread with hummus (I got some fancy-pants scallion parsley flavored hummus from Trader Joe’s but I bet any kind of hummus would be good).
