When I was a kid, my Gramma would make fruit salad. I don’t know if she used fruit cocktail or what her recipe was, I just know I liked it and I ate it. I think the main reason I liked the salad was because after pouring the salad into her big, Pyrex bowl, she would cover the salad with whipped cream and maraschino cherries. What’s not to love, eh?
One spring, a few years ago, I was craving fruit salad, but I wanted something more fresh and healthy than traditional fruit salads. I came up with this.
Since this is a quick, thrown together salad, use your own taste preferences as a guide when adding the lemon and lime juice. Also, this can be made as a single serving or a large sized salad, so I am not going to include how much of each fruit you will need, just use your own judgment about how much salad you will be serving. For example, if I am making a large salad, I use at least four bananas, and full sized containers of fresh pineapple rings, kumquats, and strawberries. But, if you want a single serving, one banana, two pineapple rings, three or four strawberries, and five or six sliced kumquats, should make you a decent single serve salad.
Funky Fruit Salad
Sliced and seeded kumquats
Sliced fresh strawberries
Fresh pineapple rings, cut into chunks (save the juice)
A generous splash of lime juice
A generous splash of lemon juice
The reserved pineapple juice from the fresh pineapple
Stevia in the Raw (For a large salad, I use three packets of the Stevia in the Raw, but for a single serving, use either a half or a whole packet, depending on how sweet you want the salad.)
Mix everything together, let the salad chill in the refrigerator for at least an hour. Serve and enjoy! It’s up to you if you want to put whipped cream and cherries on the top
